For the super bowl this year I made a spinach dip from whole foods. It has all the cheesy, yummy goodness of a regular spinach dip but with a secret ingredient - cauliflower. It reminded me of something from the book jessica seinfeld 'wrote' but after seeing her chop carrots on the today show, I don't think she can cook let alone write an entire cookbook. Anyways, I actually was quite impressed with this dip and the way it snuck in veggies. Gotta get my 3-5 servings! And you can low fat or light cheese/mayo for a lighter version.
2 1/2 cauliflower florets, seamed
4 oz neufchatel or cream cheese
1/4 regular or light mayonnaise
1-2 jalapenos, chopped
2 garlic clovers, chopped
3/4 teaspoon salt
12 oz (3 1/2 cups) pepperjack cheese
3 cups baby spinach leaves
Preheat the oven to 375.
In a boiling pot of water cook the cauliflower for about 5 minutes. Drain and allow to cool. Pulse cauliflower in a
food processor. I don't have a food processor but since I try to be like every good french housewife and have a
food mill, so I used that.
Add neufchatel cheese, mayo, jalapenos, garlic, salt and all but 1/2 cup of the cheese. If you are using a food processor, pulse until smooth. Or just mix in. Add spinach and pluse or mix again. Scrape into a one-quart baking dish and sprinkle with the remaining cheese - I added some bread crumbs and ground red pepper for looks. Bake for 35 mintues. Serve with chips, veggies or whole grain crackers.
