i love a good key lime pie. so how about key lime pie cupcakes? i guess there's no real 'pie' in these but the essence is there. recipe by moi!
1 1/2 tsp vanilla
combine graham cracker crumbs and butter. mix together. fill a cupcake tin with cupcake papers and spoon 1 tablespoon of the crumbs into the bottom of each paper. push the crumbs together so they make a crust. you might want to use the bottom of a small glass to flatten. bake for 5 minutes.
beat butter in a mixer until fluffy. gradually add 2 cups of the powder sugar and beat constantly. slowly beat in the lime juice, vanilla and lime zest. slowly beat in the rest of powdered sugar. if you want your frosting thicker, add more powdered sugar. using your favorite frosting technique, frost the cupcakes immediately.
