when the blueberries are looking are good as they do right now, that means its time to use them in one of my favorite summertime desserts. my first favorite summertime dessert is peach 'n cream pie, but peaches aren't really in their prime until august. luckily i have my second favorite, blueberry crisp to tie me over.
24 oz blueberries, washed + dried
1 1/2 cups sugar
1 1/2 cups flour
3/4 cup butter
1 1/2 tsp cinnamon
grated rind of 1 lemon
preheat oven to 350. fill a 9x13 pan with blueberries. set aside.
in a medium size bowl blend sugar, flour and butter as if you're making a pie crust. {i think a pastry blender works best.} mix in cinnamon. spread over the blueberries and top with lemon zest. bake for 1 hour.
{covering with sugar, flour, butter + cinnamon}
{topping with lemon zest}
{blueberry crisp}
