researching: carrot cake cupcakes.
- i'm doing a wedding in august and the bride requested carrot cake cupcakes. with cream cheese frosting. i've never made a carrot cake but i'll need to experiment before. don't these blueberry cakes look good too? makes me want to make a blueberry crisp.

i just made carrot bread for the first time and with rave reviews. i think i just used smitten kitchen's zucchini bread recipe and subbed in carrots instead of zucchini. cream cheese frosting i have no idea how to do, but that's where your genius comes in.

and added walnuts/raisins to it. although, i'm sure you could do what i thought i did as well. okay, i'm not making sense again. ciao.

Ditto Michelle - I really hope the carrot cakes are for the Leavenworth wedding :) I'm sure they'll be amazing. I promise I'll do a better job at cupcake patrol than I did this past weekend.
