key lime cupcakes

i love a good key lime pie. so how about key lime pie cupcakes? i guess there's no real 'pie' in these but the essence is there. recipe by moi!

1 1/2 cups graham crackers, crumbs {about 8 full graham crackers}

1/3 cup butter, melted

white cake mix* {*i've modified since to make and use my favorite white cake recipe.}

zest from 1 lime

1/4 cup sugar

1/4 cup water

1/3 cup room temperature butter

4 1/1 cups powder sugar

1/4 cup fresh lime juice
1 1/2 tsp vanilla

1/2 tsp lime zest

preheat oven to 350.

in a small saucepan combine the sugar, water and zest from one lime. bring to a boil and stir until all the sugar is dissolved. remove from heat and run through a strainer. set aside and allow to cool.

combine graham cracker crumbs and butter. mix together. fill a cupcake tin with cupcake papers and spoon 1 tablespoon of the crumbs into the bottom of each paper. push the crumbs together so they make a crust. you might want to use the bottom of a small glass to flatten. bake for 5 minutes.

mix the cake batter according to the directions on the box or your favorite recipe. spoon the cupcake mix on top of the cooked graham cracker crust, about 1/4 cup in each or if you have one, use a mini ice cream scoop. bake for 19-22 minutes. allow the cupcakes to cool on a wire cooling rack.

when the cakes are cool, spoon 1/2 teaspoon of the lime simple syrup over the cupcakes. this will enhance the lime flavor and keep them moist.

beat butter in a mixer until fluffy. gradually add 2 cups of the powder sugar and beat constantly. slowly beat in the lime juice, vanilla and lime zest. slowly beat in the rest of powdered sugar. if you want your frosting thicker, add more powdered sugar. using your favorite frosting technique, frost the cupcakes immediately.

Thank you for posting this recipe - these are DELICIOUS!!! To make this "my own" I used Key West Lime Juice and added my bits of lime zest (strained from the simple syrup) to the cake batter.
