irish car bomb cupcakes

i'm not irish but i will spread the st. paddy's day love - with some irish car bomb cupcakes. 

for those of you who have never experienced an irish car bomb it is a little drink that has a big consequence.  you take a shot glass and fill half way with bailey's irish cream and then jameson whiskey.  fill a pint glass 1/2 to 3/4 of the way full with guinness beer {i like less beer so i don't feel so full.} drop the shot into the pint and chug away.  **warning** too many of these is not good.

but too many icb cupcakes would be good! guinness + chocolate and bailey's/jameson + sugar/butter.  now who's got the pot of gold?  recipe inspired from here.

 

cake:

1 cup guinness stout
10 tablespoons (1 stick plus 2 tablespoons) unsalted butter
3/4 cup unsweetened cocoa
2 cups superfine sugar
3/4 cup sour cream
2 large eggs
1 tablespoon vanilla extract
2 cups all-purpose flour {i used cake flour}
2 1/2 teaspoons baking soda

frosting: 

1/3 cup cup butter 

4 cups sifted powder sugar 

1 1/2 teaspoons vanilla

1 airplane shot* of bailey's irish cream

1 airplane shot of jameson whiskey

preheat oven to 350 degrees.

in a large saucepan, combine guinness and butter. place over medium-low heat until butter melts, then remove from heat. add cocoa and superfine sugar, and whisk to blend.

in a small bowl, combine sour cream, eggs and vanilla; mix well. add to the guinness mixture. slowly add flour and baking soda, whisk again until smooth. {i transfered the mix to my mixer.}

spoon into a cupcake tin lined with papers.  bake until risen and firm, about 19-22 minutes. place cupcakes on a wire rack and allow to cool.

frosting: sift the powdered sugar so there are no lumps.  beat the butter until light and fluffy.  add 2 cups powered sugar, mix well.  add vanilla, bailey's and jameson, mix until smooth.  add the 2 remaining cups of powdered sugar. spread a small amount onto each of the cakes.  enjoy!
