if you're going to drink margaritas you have got to have something to go with. i made some guacamole to complement our beverages. we had a large crowed so quadrupled the recipe but here's my recipe if you're making for two.
2 ripe avocados {if you're avocados aren't ripe put them in a paper bag overnight}
1 small tomato, diced {1/2 cup}
2 tbls white onion, diced
1 tbl cilantro, chopped
1 tbl lemon juice {squeezed from 1/2 lemon}
1 tsp garlic, minced {1 small garlic clove}
1/2 tsp kosher salt, more to taste
1/4 tsp chili flakes, more if you like spicy
i added a few dashes of this lime chili season my mom brought me back from mexico
in a medium sized bowl, mash avocados. i like to use a pastry blender. add tomato, onion, cilantro, lemon juice, garlic and stir together. stir in salt and chili flakes. refrigerate for 2 or more hours before serving. save one avocado pit and place in the guacamole to keep from turning brown. remove before serving.
I think I could eat guacamole every day. Seriously. Way to make me sooo hungry.

Kevin and I hosted a dinner party last night and made shrimp & fish tacos. I made this guac for one of the toppings - it was a hit! Audrey, one of our friends' 3 year old, was eating it by the handful! :)
