and finally the last cupcakes from the weekend - birthday cupcakes for marjorie. her only request? something with coconut. so i decided to create the girl scout samoa cookies in cupcake form. I used the same chocolate cake recipe as the other two cupcakes i made and topped with a meringue-style frosting, caramel and toasted coconut.
frosting:
8 large egg whites
2 cups sugar
1/2 tsp cream of tartar
2 tsp vanilla
place egg whites, sugar and cream of tartar in a bowl over a saucepan of simmer water. whisk together until smooth. transfer to the bowl of an electric mixer and whisk on low speed and gradually increasing to high speed, until stiff peaks form, about 5-7 minutes. add vanilla and mix until combined. spoon into a pastry bag and frost on cupcakes. drizzle with caramel and sprinkle with toasted coconut. to toast the coconut, spread out on a cookie sheet and toast in a 325 oven for 7-10 minutes until light brown.

Lauren, the recipe is there (before the 2 image). It is short and simple but it is located before the 2 images of that adorable finished product.
