i lived in san diego for a few years and now that i'm back in seattle i have a hard time finding good fish tacos. so when i had my girlfriends over for dinner {who also lived in southern california} i decided to make them the best fish tacos i could come up with.
1.5 lbs of white fish
4 tbls olive oil
1/4 cup lime juice {that's the juice of about 1 lime}
1 tsp dried oregano
salt + pepper
place fish in a large glass dish. whisk together olive oil, lime juice, oregano, salt and pepper. pour over the fish and allow to marinate for 15-30 minutes.
preheat oven to 400 degrees. heat an oven proof skillet over medium-high heat. place the fish, skin side down and grill for 2 minutes. flip over and grill for 2 more minutes. finish in the oven for 3-5 minutes. let rest for 5 minutes. flake the fish with a fork.
serve with flour or corn tortillas, cabbage, cheese,salsa, guacamole, lime wedges or your other favorite taco toppings.
i love squeezing fresh lime on my fish before adding the toppings.
