happy cinco de mayo! i know everyone expected me to make a margarita cupcake but i felt like that would be too close the key lime pies. so i went out on a limb and made margarita shortbread. rolled in some fun green sprinkles for a little festive touch.
recipe by moi!
3/4 cup butter
1 cup sugar
1 tsp vanilla
2 tbls tequila
1 tbls lime juice
1/2 tsp lime zest
3 1/2 cups flour
1/4 tsp salt
mixture 3 parts sugar to 1 part salt for rolling the cookies {i did 1 part green sprinkles, 2 parts regular sugar and 1 part salt}
preheat oven to 350.
in the bowl of an electric mixer with the paddle attachment, cream together butter and sugar. add vanilla, tequila, lime juice and lime zest and mix well. add flour and salt and mix together until the dough pulls away from the sides of the bowl. cover dough with plastic wrap and place in the fridge for 30 minutes.
sprinkle a wood board or counter top with flour and roll out with a rolling pin until the dough is 1/2 inch thick. cut dough with your favorite cookie cutters and place on a cookie sheet. {roll the edges in the sugar/salt mixture, or sprinkle the tops.} bake for 18-22 minutes. cool on a wire rack.
Those look yummy, should have had one with my Corona!
